I’m on a roll! Another week gone by and I’m pleased to report that I have lost another pound, making a total weight loss of half a stone in three weeks.¬† Needless to say, I’m delighted!
This has also come as a pleasant surprise, considering that the diet went right out of the window during the week.¬† Having been invited to a posh event, with complementary bubbly on offer, my resolve was weakened after just one glass.¬† You know what it’s like, one glass leads to another, to another, and before you know it, you just don’t care!¬† And by that time, I was feeling a bit peckish too, so instead of doing the sensible thing and heading home for a banana and a fat free yogurt, I had my arm twisted (!) to go for a burger at Five Guys in Covent Garden.¬† I didn’t go mad, just the little hamburger, fries and a few peanuts!
One of the best things about this diet is that I am allowed threats like wine, burgers and chips.¬† A small 125ml glass of dry white wine is around 4 syns, so well within the 10 syns per day allowance.¬† Sadly, the standard takeaway burgers and chips might be a syn too far, but there are some great Slimming World alternatives!
But rather than give up and think What the Hell, and do the usual pig out for the rest of the week and “start the diet again on Monday”, I did the right thing and remembered a Slimming World philosophy I learned at one of the group sessions I used to attend.
There are 7 days in a week, 3 meals a day, 21 meals in total.¬† I’ve strayed on just one meal out of 21, it’s not the end of the world!¬† Consequently, I didn’t feel guilty about it and just carried on the next day, sticking to my plan.¬† I’ve been good ever since and trying more recipes from the stash Slimming World magazines I have collected:
Recipe of the week
Classic Spaghetti Carbonara
Serves 4 ready in about 15 minutes
400g plain dried spaghetti
100g back bacon, all visible fat removed, cut into 2cm pieces
4 garlic cloves, finely chopped
3 large eggs, lightly beaten
120g parmesan cheese, finely grated
Salt and freshly ground black pepper
Small handful of fresh parsley, finely chopped
Tomato, cucumber and carrot salad
1. Cook the spaghetti according to the packet instructions.¬† Meanwhile, place a large frying pan sprayed with Fry Light over a medium-high heat.¬† Add the bacon and stir fry for 2-3 minutes, or until lightly browned.¬† Add the garlic and stir-fry for 30 seconds, then set aside.
2. Drain the spaghetti and add to the bacon mixture in the pan.¬† Add the eggs and half the parmesan, season and toss. (The heat from the spaghetti will partly cook the egg, but still leaving it moist.)
3. Divide the spaghetti carbonara between 4 bowls or plates.¬† Garnish with the parsley, sprinkle over the remaining¬† parmesan abd serve with the salad on the side.

This was the quickest and easiest recipe we have tried so far, and a real winner.¬† Cheated a bit by adding some Pizza Express House Light dressing to the salad, but hey, I need the odd treat!
A family favourite this one, 9 out of 10!
